These delicious rolls with salmon mousse are a delicious starter dish, an alternative to the usual canapés or bruschettas. You can prepare them comfortably in advance and serve them paired with a glass of Prosecco.

- 2 packages of puff pastry
- 200 gr. smoked salmon
- 60 g of ricotta or mascarpone
- 100 g of cream
- 1 egg yolk
- Sesame seeds
Cut the puff pastry into long strips of about 1 cm of base along the entire length. Roll them onto the molds for cannoncini rolls, slightly greasing with oil.
If you like, brush the puff pastry with egg yolk and sprinkle with light or dark sesame seeds.
Put the puff pastry rolls in preheated oven at 180° for about 15/20 minutes until they are golden. Let it cool out of the oven.
Cut the smoked salmon into small pieces and put it in the blender. Add the ricotta or mascarpone and salt and blend well, until you get a smooth cream. Whip the cream in a separate bowl and add it to the salmon mousse, season with salt if necessary and stir. Add a little chive to taste.
Put the salmon mousse in a pastry bag and fill the rolls with it.
