Risotto with mushrooms and truffles

  • 300 g rice
  • 100g butter
  • Olive oil
  • Half white onion, finely diced
  • 400 g Porcini mushrooms
  • Half glass dry white wine
  • A white truffle 

In a large saucepan, fry the onion you have finely diced in butter for a few minutes. Add the rice, stir and pour the dry white wine.

Cook the rice adding water, a ladle at a time, stirring the rice constantly. Let all the liquid absorb before adding your next lade. In the meanwhile cook the mushrooms in olive oil.

When the rice is almost cooked add the mushrooms and some butter, stirring until the risotto softens. Finally add the grated white truffles.

Let is rest one minute and serve the risotto garnished with truffle shavings. Pairs with a glass of Barolo.
