Red Devil Lentils

Lentils are inexpensive and make a great meat substitute or side dish. The red devil lentils recipe is an appreciated side dish, tasty and healthy, as lentils are very rich in proteins, phosphorus and vitamin B.

  • 300 g lentils (dry weight)
  • Extra virgin olive oil
  • 1 clove garlic
  • Chopped parsley
  • 200 g peeled tomatoes
  • Salt and pepper
  • Chili

Boil the lentils in salt water for about 20 minutes. Then heat the extra virgin olive oil in a large saucepan over medium-high heat. Add the garlic, stirring frequently until softened for 2 to 3 minutes. Incorporate the tomatoes and cook for about 15/20 minutes, covering the pan.

Add the pre-boiled lentils and the chopped parsley and go on cooking for 20 minutes more, adding a little of water and chili to taste. Add salt and pepper and serve hot.
