Pasta with radicchio

This pasta with radicchio is a delicious and quick pasta dish, ideal to prepare in winter when you can find the fresh radicchio. There are many varieties of radicchio; here we use a red variety, which is particularly flavorful and gives the dish an intense vegetable note.

  • 400 gr penne, spaghetti or fusilli
  • 400 gr red radicchio
  • 5 gr fontina cheese
  • Half onion
  • Single cream (1 cup)
  • Extra virgin oil
  • Salt and pepper to taste.

Wash and cut the radicchio into strips. Peel and finely chop the onion and sauté it in the oil in a pan, add then the radicchio, cover and stew. When radicchio is cooked (just a few minutes) season with salt, pepper, add the cream and cook more for 3 minutes, stirring with a wooden spoon.

Boil the pasta in salted water, and cook the chosen pasta al dente. Drain the pasta when cooked and put in the pan with radicchio sauce. Add the fontina cheese cut in cubes, stir and serve immediately.
