Pasta with shrimp and asparagus

Pasta with shrimp and asparagus, to which you can add tomatoes if you wish, is a very good and simple first course you can easily prepare at home. Your family and friends will enjoy your culinary success.

  • 350 grammes of pasta (short length)
  • 250 grammes of fresh or frozen asparagus
  • 200 grammes of fresh shrimp
  • ½ glass of white wine
  • 1 garlic clove
  • Extra Virgin olive oil to taste
  • Salt and Pepper to taste

Cut the asparagus into bite size pieces and set aside. Meanwhile, in a deep pan saute` the garlic clove in the olive oil over a low heat.

Then add the asparagus and prawns and sprinkle with the white wine. Allow the wine to reduce (evaporate) and simmer for about 15 minutes. Add salt and pepper to taste.

Boil water for pasta and salt to taste. Cook pasta “al dente”, drain and add to pan with the sauce.

Mix together for a few seconds and serve immediately.
