Olive bruschettas

Olive bruschettas: here again a typical Italian bruschetta made with olives, a fruit which is the symbol of Italy. These bruschettas are ideal to be included as a starter or for an aperitif. They are a little bit strongly flavoured and go well with a glass of structured red wine.

  • 1 cup black pitter olives
  • 4 anchovies
  • 2 tablespoons squeezed capers
  • Some rum at your taste
  • 4 tablespoons olive oil
  • Sliced Tuscan bread

Lay the bread on a tray and toast it in the hot oven.

Put the ingrediets into a food processor and blend them briefly: you should get a dense but not smooth cream.

Spread this cream onto the toast.
