Minestrone Soup

This is a warm, brothy, winter soup, made of various vegetables ingredients so rich that is ideal also as a main dinner course.

  • 1 onions
  • 2 big carrots
  • 2 sticks of celery
  • 3 potatoes
  • 3 zucchini
  • 3 tomatoes
  • 200 gr. Savoy cabbage
  • 3 caps white beans (ready to use)
  • Extra virgin olive oil
  • Salt and pepper
  • Rice or small pasta
  • Parmesan cheese

Slice the onion thinly and brown it in four tablespoons of oil. Then add the cubed potatoes and brown gently. Add the other vegetables, previously cut into small cubes, plus the cabbage and finally the tomatoes.

Let it cook some minutes and then pour water to cover the vegetables. Cover and cook slowly for almost 40 minutes, adding boiling water if the soup starts drying out.

When vegetables are almost cooked add the white beans and other extra water for the pasta or the rice. When the minestrone starts boiling again, add the pasta or rice (around 260 gr) and continue cooking.

Serve hot, sprinkling a little extra virgin olive oil and grated parmesan cheese to taste on it.
