Mushroom Soup

It’s a simple, hearty, super creamy soup. Use any kind of mushrooms for this recipe. With few simple ingredients you can arrange this simple, creamy soup using any kind of mushrooms.

  • 1 pound of porcini mushrooms
  • Cloves garlic
  • Half an onion
  • Extravirgin olive ol
  • 2 tablespoons tomato sauce
  • Cheese
  • 2 cups water

Cut the mushrooms into quite big pieces and sightly fry them in 2 spoonfuls of extra virgin olive oil, minced garlic and onion. Add e few drops of water.

When the mushrooms have well absorbed the flavours, add the tomato sauce, the water, salt, pepper.

Leave the soup to simmer for a long time. Serve with plenty of grated cheese.
