Gnudi is a typical Tuscan dish, made with ricotta cheese and spinach. It is perfect for lunch or dinner, and seasoned with a bit of tomato sauce or a sause made mixing hot butter and sage leaves.

  • 350 gr. Ricotta cheese
  • 500 gr. of spinach
  • 2 small eggs
  • Flour
  • nutmeg
  • Parmigiano
  • Meat board
  • Salt and Pepper to taste

Wash and boil the spinach. Sprinkle accurately and then finely chop them on the cutting board.
Put them in a bowl and the two small eggs, 2 tablespoons of flour, 4 tablespoons of parmesan cheese, salt, pepper and a pinch of nutmeg.

Mix and form some little balls giving them a round or elongated shape.

In a saucepan, boil water with a little salt or alternatively some broth, put the gnocchi one at a time. Cook for a few minutes, drain them and season them with tomato sauce or butter and sage.
