Meringues are prepared with very few ingredients, but it can be difficult to make them perfect, white, shiny, with right texture and sweetness.
Let’s see then how to prepare perfect meringues.
Tools: you will need electric hand whisk for mounting or planetary and a pastry bag with star or other mouthpiece, a baking tray lined with baking paper. Before starting, preheat the oven at 100°.
Ingredients: 260 gr. sugar, 3 fresh egg whites at room temperature, 1 teaspoon lemon juice.
Melt 150 grams of sugar in very little water in a pot. Keep on the heat and mix until the sugar has dissolved.
Using an electric hand whisk, start whisking the whites slowly, without sugar and continue until the volume has increased at least 4 times. Incorporate a tablespoon of sugar powder (approx. 110 grams) at a time, continuing to whisk slowly. Go on until the mixture comes back to stiff peaks and is thick and glossy.
Place the compound in the pastry bag helping with a glass and create the meringues with the shape you like onto the baking paper leaving plenty of space between them. You can make it about 4 cm in diameter – an average size. Put them them in the preheat oven lowering the temperature to 90 ° holding them for 30 minutes if you want them with a crunch on the outside and soft inside or for about an hour if you want them more cooked. Be careful not to raise the temperature, meringues must remain white (and the addition of lemon will help you in keeping them white). They are ready when they lift away easily from baking paper.
Do not add salt to the compound. If you do not use them immediately, put them in an airtight bag.
Suggestion: you can also add some drops of food pigments to get colorful meringues for a party!
